With the oven parts cleaned, it’s time to reassemble the oven.
Follow these steps carefully:
Assembling the Fingers
Use the Oven Finger Arrangement Diagram to reassemble the fingers correctly. This example follows the finger arrangement for a Middleby 740 WOW oven:
- Group Components by Code: Identify the engraved codes on the finger components and group the three parts for each finger:
a. Finger Manifold
b. Finger Inner Plate
c. Finger Outer Plate



- Position the Manifold: Place it upright and note the code engraved on its side.
- Attach the Inner Plate:
- Find the corresponding Inner Plate by matching the engraved code with the Finger Arrangement Guide.
- Slide the Inner Plate into the Manifold.



- Attach the Outer Plate:
- Locate the correct Outer Plate by validating its engraved code with the Finger Arrangement Guide.
- Hold the Outer Plate securely with both hands and slide it onto the Manifold from the top.



Repeat these steps for all fingers, ensuring proper alignment and code matching to maintain the correct oven configuration.
Installing the Fingers and Blank Plates
Position the Full-Blank Plate:
- Slide the full-blank plate into the oven cavity’s top flange (rail).
- Ensure it is centred between the brackets, with tilted edges overlapping the adjacent fingers. This overlap prevents gaps critical for proper airflow and heat distribution.


Insert the Fingers:
- Refer to the Finger Arrangement Diagram to select the correct fingers.
- Using both hands, slide the back finger into place from the oven entrance.
Similarly, slide the front finger into place from the oven exit or the side with the control panel. 


Insert the Half-Blank Plates:
- Slide the half-blank plates into the flange from the front and back of the oven.
Make sure the plates fully overlap the fingers, leaving no gaps, as illustrated in the diagram. 

Installing the Bottom Fingers
Position the Fingers:
- Using the Finger Arrangement Diagram as a reference, select the appropriate fingers for the bottom.
With both hands, carefully slide each finger into the brackets, as shown in the diagram. 
Complete the Installation:
- Install all four fingers in the bottom flange, ensuring they are evenly placed with no gaps to maintain consistent heat flow.


Following these steps and referring to the diagram for guidance, ensure the oven is correctly reassembled for optimal cooking performance.
Installing the Oven Plugs
The Middleby 740 WOW oven deck includes four plugs—two for the top and two for the bottom. Correct installation is crucial to avoid oven damage and prevent heat loss. This guide will help you differentiate and correctly install the plugs. Refer to the picture below for a visual comparison between the top and bottom plugs to ensure correct placement.
Bottom Plugs:
- These plugs are designed to support the weight of the conveyor belt assembly and frame.
- They can be identified by their distinctive upside-down “L” shape at the base.
- Use two hands and place the oven’s bottom plug into its position, as shown in the picture.
- Secure the plug using two fasteners. Tighten the fasteners by hand—ensuring they are snug but not overly tight.



Top Plugs:
- The top plugs are used to secure the oven eyebrows in place.
- They feature a 90-degree angle on each side for proper alignment and fit.
- Use two hands and place the oven’s bottom plug into its position, as shown in the picture.
- Secure the plug using two fasteners. Tighten the fasteners by hand—ensuring they are snug but not overly tight.
Note: First, insert and secure the conveyor frame before attaching the top plugs.
Installing the Conveyor Belt into the Conveyor Frame
Note: This process requires two people for safe and efficient handling.
- Position the Frame.
- Unfold the conveyor belt frame on a flat surface
- Place the Belt:
- Lay the rolled conveyor belt on the flat surface at the end of the frame without sprockets.

- Begin Feeding the Belt:
- Unroll approximately 10 inches (25 cm) of the belt and feed it into the conveyor frame, sliding it under the driver shaft.

- Bring the two ends of the belt close together, ensuring the master links remain intact and securely in place.

Important Note: When reinstalling the belt, ensure that the bends of the hooks at both ends are facing toward the oven exit.

- Prepare the Frame:
- Fold the conveyor belt frame and move it to the oven exit side or the side with the motor sprockets.

- Each person should hold the frame from opposite sides, lift it carefully, and partially unfold it.

- Gently slide the frame halfway into the oven cavity along the rails, ensuring you avoid contact with or damage to the motor sprockets.

- Once the frame is partially inside, fully unfold it. Take care to keep your hands clear of the hinges during this step.

- At this stage, the frame’s weight will be supported by the rails. One person should move to the back of the oven while the other remains at the front.

- Verify that the frame is stable, properly aligned, and does not shift or move.

Covering the Motor Chain and Sprockets

Attaching the Oven Eyebrows
Note: Oven eyebrows are essential for maintaining consistent oven temperatures. They must be installed at the correct height. In most Papa John’s restaurants, the gap between the oven eyebrows and the conveyor belt should not exceed 2.5 inches (6 cm). Refer to the Oven Eyebrows section of this guide for additional details.

Adjusting the Conveyor Belt Tension
Proper belt tension is crucial for maintaining optimal oven performance and safety. Over time, the conveyor belt may loosen with regular use, leading to issues such as:
- Increased cooking time compared to the control display settings.
- Damage risks, including tangling with other oven components like crumb trays or metal bars, potentially causing permanent damage to the oven motor.

Key Requirements:
- The recommended belt tolerance is 1 inch (2.5 cm).
- Always ensure the conveyor belt is cool before adjusting the tension. Never attempt to adjust a hot belt.
Steps to Adjust Belt Tension

- With the conveyor assembly inside the oven, stand at one end and lift the belt up through the oven chamber opening.
